What are the characteristics of iron pickup truck varieties?

The most important feature of the iron-leaf coffee tree is that the top leaves show a reddish bronze color, so it is also called "red top coffee." How is Front Street Coffee grown?

As a country where tea culture prevails in China, coffee is an exotic product, so Chinese people do not know much about coffee knowledge. In order to explore more coffee knowledge, Qianjie went to Lincang, Yunnan Province in 2013 to open the chapter of planting coffee. From site selection, seed selection, seedling raising, planting, harvesting, treatment and baking, colleagues in Qianjie have taken care of them, and many experience and knowledge related to varieties, altitudes and treatment methods have been summarized from them.

The coffee varieties originally cultivated in Yunnan were ancient iron card and bourbon. Later, Yunnan coffee was attacked by global leaf rust, causing large-scale death of coffee trees and greatly reducing the planting area. Later, with the support of major foreign companies, a high-yield disease-resistant variety Katim was introduced. This also established the status of katim varieties instead of the ancient tree species iron pickup, becoming the main variety of Yunnan coffee today. Because of the low yield, easy disease and high cost of management and protection, it means that growers need to explore for a longer time, which is why most Yunnan coffee farmers are unwilling to plant it.

Lincang, Yunnan Province, is affected by warm and humid Indian Ocean airflow and southwest monsoon. The four seasons are not obvious, but the dry and rainy seasons are distinct, there is more rain, the sunshine time is long, the frost period is short, there is no frost all year round in some areas, and the three-dimensional climate is obvious, which is very suitable for Arabica coffee cultivation. Therefore, the most primitive iron pickup truck was specially selected in Qianjie. However, the delicate iron sheet card is also famous for its low yield and poor resistance, so Qianjie has also put a lot of effort into planting management. After 5 - 6 years of cultivation, the first batch of fruits were finally harvested in 2020 and produced by natural drying and sun treatment, also named "Front Street 2013".

Why solarization?

The front street will arrange personnel to turn regularly to avoid uneven heating of coffee fruits, resulting in excessive fermentation. When the coffee berries are dehydrated from bright red to dark purple and reach the target moisture content, they can be sent to hulling and roasting. Sun-baked iron pickup shows a fuller fermented flavor than washed, sweet and prominent, with caramel, berry, black tea aroma.

Yunnan Tiekka Coffee Hand-brewed Flavor Taste

On roasting, Qianjie believes that the taste of Yunnan coffee should be with mellow coffee aroma and a certain amount of acid, so Qianjie will use medium roasting degree. Daily store products, the front street is extracted in the form of hand brewing, hoping to present the aroma of coffee itself for everyone to taste.

Hand-brewed black coffee is not only a daily extraction method produced by Front Street baristas, but also a simple method that many coffee people can operate at home. Qianjie considers Yunnan iron card coffee to be balanced in taste, that is, not to have too high acidity and heavy bitterness. Front Street prefers to use V60 filter cups with medium fine grinding and medium water temperature for extraction.

The front street will adopt corresponding parameters for brewing different coffee beans. The coffee beans with deeper roasting degree, such as mantinin coffee and Brazilian coffee, will use the temperature of 87~88 degrees Celsius and medium coarse grinding degree in the front street, while the coffee beans with lighter roasting degree, such as Esseye plus sherfie and Panama rose summer coffee, will use the high temperature of 91~93 degrees Celsius and medium fine grinding degree in the front street to stimulate the aroma of high-altitude hard beans.
