Background knowledge:

In 1941, the German inventor Peter Schlumbohm designed the Chemex hand punch pot, and to this day, its exquisite design remains the same-the glass funnel in the upper part and the tapered flask in the lower half are connected by a detachable wooden handle and tied to an exquisite leather rope. This unique design has been praised as "the perfect combination of reason and madness" and has become the collection of New York's modern gallery and other museums.

Chemex hand brewing pot has always been a must-have collection for coffee connoisseurs. The flavor of its brewed coffee is similar to that of trickle-filter coffee, but it requires high skill. The particle size of coffee powder must be a little thicker than drip coffee, and the rate of water injection must also be appropriate. The advantage is that it can brew more people's coffee for relatives and friends to enjoy.

Materials required:

Chemex hand punch pot

Chemex special filter paper

Coffee beans

Bean grinder

Hot kettle

Electronic scale

timer

Cooking time:

3-4 minutes

Step 1

It takes twice as much water to boil the actual coffee. For example, a 6-cup Chemex hand punch requires about 1200-1400 grams of water.

Step 2

Weigh 50-60 grams of coffee beans (about 4-5 tablespoons).

Step 3

Grind beans while boiling water, about the size of French coffee powder particles.

Step 4

Open the filter paper and place it on the top of the Chemex hand flushing pot. Point the third half of the filter paper toward the direction of water injection; the filter paper should be fully supported to avoid blocking the water column.

Step 5

Soak the filter paper in the center with a little hot water and preheat the hand flushing pot. After 1 minute, the same water can be poured into the coffee cup to preheat.

Step 6

Pour the coffee powder on the filter paper and gently shake the hand to make the coffee powder evenly distributed. The smoother the surface of the coffee powder, the better, and the more evenly it can be boiled.

Step 7

Starting from the center of the coffee powder, slowly and evenly inject twice the weight of the coffee powder (for example, 50 grams of coffee powder requires 100 grams of water). Try to keep the side filter paper upright in the process of water injection.

Step 8

After water injection, the coffee powder will begin to produce bubbles and expand, which will take 30-45 seconds. Complete expansion can let the water thoroughly infiltrate the coffee powder and extract a better flavor.

Step 9

After the expansion stops, continue to pour water evenly into the center of the coffee powder. The process of water injection should last for 4 minutes, during which the rate should be consistent.

Then you can enjoy the coffee. It takes a lot of skill to make good coffee in a Chemex hand pot, and it's normal to try it a few more times before reaching the perfect quality.
