What's a rose hill estate?
In 2007, documentary director Adam Overton and his photographer wife Rachel Samuel came across the Gera Coffee Forest in Bench-Maji while filming a documentary on Ethiopian coffee for the Ethiopian government. In the process, they not only rediscovered Ethiopia, but also developed the idea of establishing their own coffee estate and brand. In 2009, they were lucky enough to meet Willem Boot, the famous mule farm owner and BOP judge, and Willem Boot's idea of "returning to Ethiopia to find the birthplace of Guixia" also provided an opportunity for the couple.
Gesha Village Coffee Estate is different from most small Ethiopian farms, it is a large farm with nearly 500 hectares and has its own washing plant, laboratory and so on. The first harvest of 2015 was so well received that, with the assistance of Willem Boot, owner of Panama Mule Farm, the first international bidding was held on May 31, 2017, with 21 microbatches offered by Crescia Village, 19 of which were 120 kg, and several other batches were smaller.
Rosedale Coffee is so popular that many contestants have chosen some batches of this estate to compete and win places, including Zhao Jiabao from Hong Kong who won the 3rd place in the 2017 World Barista Competition with Rosedale Coffee, and Takayuki Ishiya from Japan who won the first Japanese Barista Competition (JBC) in his 10-year competition with Rosedale Coffee.
Ethiopian Rose Summer Coffee
Ethiopia is where coffee originated, but the coffee beans grown in Ethiopia's summer villages today have little genetic connection to the coffee beans we know as Panama's summer. Ethiopia's Gori Gesha coffee is divided into three branches, Gori Gesha (GG): This variety replicates the genetic diversity within the Gori Gesha coffee forest. The red label of Gori-Gesha Village of Qianjie Coffee is Gori-Gesha variety. Illubabor Forest 1974 (IF): Discovered during an expedition to the Illubabor Forest in 1974, an antibody-producing strain was developed by the Ethiopian Research Center. La Esmeralda Estate
Emerald manor, famous for rose summer coffee. In 1964, American banker Rudolf Peterson retired, moved to Panama, and bought Emerald Manor in Poquet, which initially focused on dairy farming. His son, Price, resigned as a doctor to help his father run the farm and introduced Kadura and Kaduai coffee varieties in 1987. He set up a washing plant in 1994 and has since owned his own coffee processing plant. In 1996, he bought Haramiyo Manor, which has a superior geographical environment and good flavor of the original coffee varieties, and merged it into Emerald Manor.
Harami was chosen by the Petersons because it was the coffee beans they grew originally, with pleasant orange and fruity notes that differed from the original taste of Panama coffee. After cup testing coffee beans in different areas of the garden, it was found that they were unknown coffee trees growing in the highest part of the estate. Due to their low yield, the former owners only used them as windbreak trees. As a result, Peterson and his son dug them out and decided to plant coffee trees in this area independently. After a surprising journey, experts identified that the coffee bean was an Ethiopian rose summer variety. Since then, the Petersons have focused most of their efforts on developing infrastructure to support excellent batch separation and fine processing.
Emerald Manor Rose Summer Coffee is divided into three types:
The red-label batch of roses planted at an altitude of 1600-1800 meters and a cup test score of more than 90 points are mainly produced in Jaramillo and Canas Verdes. Front Street's Red Label Rosedale Coffee is produced in Cannes Vedith and is sun-cured. It has a distinct rose aroma and berry sweetness.
Green label batches are not competitive but still excellent in quality. Green label batches of rose summer are planted at an altitude of 1600-1800 meters, mainly mixed with batches from different plots such as Jaramillo and Canas Verdes. The green label rose summer coffee in Qianjie is divided into sun treatment and washing treatment. Washing has floral fragrance, fruity fruit and citrus aroma acid, and the taste is fresh and clean; while sun treatment has the basic tone of washing treatment and endows it with thick and juicy taste.
The blue label is planted at an altitude of 1400-1500 meters. The blue label is a mixture of rose coffee beans from Jaramillo, Canas Verdes and El Velo. In previous years, the blue label rose summer only had washing treatment, while the blue label batch in 2020 added sun treatment.
However, in the 2021 season, Emerald Manor has cancelled the Blue Label series, and the original production area of Blue Label Rose Summer Coffee has been sold to a brand, and this brand has launched Las Rocas, or volcanic rock rose summer coffee beans. At the end of the consumer market, the original blue label is just a brand change, the flavor is still the same.

The use of segmented extraction, with 2 times the amount of coffee powder water for stewing, that is, 30 grams of water stewing for 30 seconds, and the reason for the need for stewing process, is to allow coffee powder to exhaust the internal carbon dioxide gas, so that the latter stage of extraction is more stable. Water is injected into the filter cup by small water flow in a circle until 125 grams, and then water is injected into the filter cup until 225 grams. After the water drops in the filter cup are finished, the filter cup is removed. The extraction time is 200 "from the beginning of water injection.
