Chang Li, a professor of food science and one of the study's authors, said: "The retina is a thin membrane of tissue in the eye, the back wall where tens of thousands of photoreceptor cells and other nerve cells receive and organize visual information. It is also one of the most metabolically active tissues and therefore requires high levels of oxygen to cope with oxidative stress. Lack of oxygen and free radical production can lead to retinal tissue damage and blindness."
