El Salvador, close to Honduras, Guatemala and the North Pacific, is a highland country with many volcanoes and excellent natural conditions for producing coffee. It was once the fourth largest coffee producer in the world in its heyday. However, the civil war broke out in 1979, which abandoned agriculture for 13 years, and has gradually recovered in recent years.
At present, about 12% of the country's arable land is used to grow coffee, covering an area of 165000 hectares. The main producing areas of boutique beans are SANTA ANA in the west and CHALATENANGO in the northwest, growing about 900-1500m above sea level. The main varieties are bourbon and Pacas, but it is the variety-pacamara that makes El Salvador famous in the boutique coffee world.
Among them, Pacas and Pacamara can be said to be Salvadoran varieties. Pacas is the name of the owner of a coffee farm. In 1956, it was found that the yield of coffee planted by Don Alberto Pacas was significantly higher than that of other similar coffees, so after identification by professional scholars, it was confirmed that the bourbon planted by Don Alberto Pacas had a genetic mutation, and the new variety was named PACAS. Because of the good flavor and high yield of the new variety, the Salvadoran Coffee Research Institute used PACAS to improve the variety. In 1958, PACAS was successfully crossed with Malaggippi, commonly known as Elephant Bean, to produce a species of Pacamara with large particles and complex flavor, but it was not until more than 40 years later in the 21st century that the variety began to emerge.
