The Todos Santos cooperative now has 55 different small farmers working together to produce coffee. Todos Santos is a town located 2400 meters above sea level. From Todos Santos (Todos Santos), you have to cross a dusty road to reach the village of Tuiboch, where coffee trees are actually planted. When the Todos Santos cooperative was founded in 1995, it was made up of only 10 people, growing to the current 55 producers made up of the Mayan Mamei. The area of the manor ranges from 5 to 10 hectares, with an average yield of 8-1000 bags per hectare. These coffees are all organic fair trade certified coffee. At first, only two varieties, Borbon and Caturra, were planted. At present, the new varieties planted include Sarchimor,Catimor,Anacafe 14 and Pacamara. The coffee will be processed in each producer's house and then dried in a small cement square or roof. The rain in September and early October ripens the coffee fruit in a shorter time, allowing the coffee to be harvested between January and March of the next year.
