After screening and grading the red cherry color coffee fruit, the treatment plant directly uses water to remove the coffee fruit that does not bear fruit floating on the water, picks up the sunken red cherry color coffee fruit, then peels and washes the raw beans and places them on the scaffolding for natural exposure, the humidity reaches 12% or less, it will be sent directly to the Ethiopian Commodity Exchange (ECX) warehouse in Awassa. Cup grading and quantity of beans normally washed are stored in the form of shelled beans and are not shelled until they are exported.
Golden Reina Ambaya (Gelana Abaya) is located in Lake Abaya to the west and Yega Xuefei in a small production area in the east. The coffee beans are harvested from locally grown small coffee farmers. They are composed of a collection of 90 to 10, 000 small coffee farmers. The average farming area of these small farmers is about 3.5 hectares, and the altitude is about 1900 to 2, 000 meters. Coffee varieties are mainly a mixture of Typica and Heirloom (native species).
Due to the traceable trend of the production curriculum vitae of the global coffee market, local production will be subdivided into villages or tribal communities to show flavor personality.
