Donkey Manor (Finca La Mula) was founded by Dutch-born Willem J. Boot in 2006 and won the Best Panama Award for the first time in 2014, winning the first prize and 11th place in the Rose Summer category, as well as Rose Charlotte 4, which caused a sensation in the boutique coffee world. The hillside was originally covered with primeval forests, and tall trees provided the best environment for shade-grown coffee. in some places, even because the trees were too luxuriant and the sun could not penetrate, affecting the growth of coffee, we had to clear the overdense bushes in the past two years to let the roses grow fully. In addition to potassium and phosphorus, the content of organic matter in the volcanic soil of the manor is also very high.
To run the farm, Boot brought in Kelly Hartmann, the youngest son of the Hartman family, who is the best coffee family in Panama, to manage farming and asked agronomists who are familiar with coffee to help improve their farming profession. The actual farming task is carried out by 15 Ng ö be-Bugl é indigenous farmers from the "Escuela de Caf é" established by the famous Panamanian coffee farmer Graciano Cruz. Graciano personally teaches coffee farming skills, and part of the course he designed is an internship on a mule farm. Since the 19th century, the indigenous people of Ng ö be-Bugl é have been an indispensable labor force on alpine farms in Panama. The mule has two official resident employees, and Willem Boot has built a pretty good staff dormitory for them on the manor, which is said to be a rare benefit of the nearby farm. The estate has five coffee growing areas and five beans and vegetables as food sources for the staff.
After the coffee cherry is harvested, it will be sent to the processing plant of Hartman Manor for post-processing and the sun will last for 14 days. In the process of sun exposure, the canopy will be used for slow heating, and after drying, it will be stored at rest. According to Boot's own experience, the mule estate faces the Atlantic Ocean and is different from other estates facing the Pacific Ocean. Willem Boot himself is a bean baker, born in the Netherlands, and his family runs a coffee shop Golden Coffee Box in Baarn, which can be said to be a coffee family. He earned a master's degree in economics from the University of Amsterdam (University of Amsterdam) and worked in his father's cafe in 1989. Boot later moved to the United States, first to San Francisco to join the German bean dryer brand Probat. In 1999, Boot founded his own coffee consulting company, Boot Coffee Consulting, to provide consulting services to coffee institutions and professionals around the world, covering Colombia, Panama, El Salvador, Honduras and Yemen. in addition to setting up coffee training courses, he taught people how to identify raw beans, cup testing and roasting, as well as coaching local farms to improve the quality of raw beans, it can be said that before setting up his own coffee farm.
