Introduction of Ethiopian Coffee Brand-Yega Sheffield producing area Cochel Kochere

Kochere is located in Gedeo in southern Ethiopia. This coffee comes from cherries grown by small farmers near the village of Cochel. It is between 1800 and 2000 meters above sea level, slightly higher than in other growing areas. The most common variety here is kurumi Kurume, which is very small in shape but has a strong flavor of fresh citrus.
The Ethiopian Commodity Exchange (ECX; Ethiopia Commodities Exchange) sets complex and stringent regulations that make it difficult to trace local coffee exported, so it is usually unknown which farm or washing plant the coffee bought comes from. The only information available is that the coffee grades range from 1 to 10 (1 is the highest grade), all sold through ECX. Even Grade1 may contain raw beans of different qualities.
In order to know more about the origin of Ethiopia, Kaffa began to work with Heleanna Georgalis a few years ago, who is a very powerful character. In Adis Abba, she runs the Moplaco raw bean export company. Moplaco buys the processed coffee from ECX and delivers it to their own shelling yard in Adis for very rigorous screening operations, using not only manual work but also large machines, for 2016. The quality of coffee is very unstable due to the influence of weather and diseases and insect pests, and it takes a lot of extra time and manpower to do this kind of work, but in the end, the performance of the flavor proves that the drudgery is worth it.
