Fazenda Ambient Fortaleza (FAF) underwent a radical change in 2001 from customary farming to sustainable farming. Last July The Barn team spent a week with FAF's Croce family to fully understand how they operate and how to encourage FAF's partner coffee farmers to produce high-quality coffee.
This coffee comes from a micro-batch of partner coffee farmer Celso Minussi, pushing the quality of Brazilian coffee to a new level, strong, clean, with chocolate mousse flavor and delicious Brazil nuts, extremely balanced and rich. Both Thurso Minos and Marcos Limongi are first-generation coffee farmers who jointly own Sitio Nossa Senhora Aparecida in Divinolandia, specializing in the production of sun-cured coffee under elevated roofs. The steep slopes on which the coffee trees are grown present a challenge to the workers at harvest time, but the conditions are ideal for coffee, with better shade and cooler air circulation, resulting in a very delicious and elegant coffee flavor.
