a. Tasting flavor: plum and caramel flavor
b. Cup test results:
The dry aroma shows toast, dark chocolate and a hint of cream.
The wet aroma still smells of dark chocolate and faint milk sugar.
The body on the palate is more obvious after a little cooling, but it is fleeting in the aftertaste, which is a relatively insufficient part.
c. Basic information of raw beans:
Saint Isabel Manor is actually called St. Isabel Cobain Manor. The "Koban" mentioned in the full name is the Copan rainforest in central Guatemala, and the varieties are Kaddura (Caturra), Catuai (Kaduai) and San Cristobal Verapaz. The first two are mentioned in "Coffee Science" or "New Coffee Science" written by teacher Han Huaizong. They are coffee tree varieties with excellent genes.
Unlike the general method of fermentation and direct drying, St. Isabel Manor is very special. They use semi-fermentation and then rest in the water, thus giving the beans a different flavor.
In addition, the estate won the third place in the 2012 COE extraordinary Cup (Cup of Excellence, the coffee-producing country's coffee tasting competition).
