Carnett Manor
Finca Canet is a small estate covering an area of 5 hectares, located in the town of San Margos in the Tarazu region, owned by the the Robles brothers Leo and Elian and Melvin brothers, who have worked together for more than 10 years to grow and produce, as well as a small water treatment plant (Beneficio). Coffee variety
The variety is Yellow Catuai, which is a mixture of two varieties from Mundo Novo and Kaddura. It was first cultivated by the Campinas Agricultural Research Institute (Instituto Agronomico de Campinas) in Brazil in 1949. Both Huangkaduai and Red Kaduai (Red Catuai/ Catuai Rojo) have high disease resistance and are suitable for planting in high-altitude and windy areas. Both kinds of Catuai also have a delicate and clean sour taste. Through the adjustment of the machine, you can produce coffee treated with red honey and yellow honey (depending on the degree of honey treatment). As Finca Canet is located in the Tara Zhu producing area (Tarrazu), the highest altitude region in Costa Rica, this area is the most intensive fruit-growing area in Costa Rica. The owner of the manor mainly grows passion fruits, but the amount of coffee is quite rare. Only coffee is grown in a specific area, taking special care to pick only ripe red cherries.
Treatment of raisin honey
Raisin honey treatment is to retain 100% pectin and zero water treatment. It increases the difficulty of the honey processing method, which requires strict control of time. On the day of harvesting coffee cherries, pour the harvested coffee fruit into a big trough, and the ripe and full fruit will sink to the bottom of the water; the underdeveloped or overripe fruit will surface, and these floating beans need to be removed. Dry the screened coffee fruits on an elevated bed for at least three days, then peel the cherries and retain the pectin before drying.
