El Salvador is the smallest country in Central America. Although the yield is much lower than that of other countries, the Pacific Ocean breeze and volcanic environment provide El Salvador coffee farmers with unique planting advantages and diversified flavor performance. Pacamara, the current winner in many cup tests, was born in El Salvador.

Among El Salvador's producing areas with soil and planting height advantages is Santa Ana volcano located at an altitude of 2,381 meters west of the capital. Santa Ana volcano, which is still active, erupted in 2005. Although it caused significant economic losses and some casualties to local coffee farmers that year, the organic ash later provided a very rich source of nutrients for the local soil, and Santa Ana is still recognized as one of the best growing areas in El Salvador.

Santa Elena Estate is one of the few estates at the highest elevation in Santa Ana and is currently run by Don Fernando Lima, the third generation owner. Mr. Fernando has more than 30 years of coffee planting experience since he was young. At present, the varieties planted in the estate are mainly Bourbon and Pacamara varieties. Mr. Fernando holds the principle of maintaining environmental diversity in the estate planting concept. When you first step into the estate, you can feel that it is different from other Salvador estates. The estate maintains a very primitive forest environment. Meanwhile, Mr. Fernando also retains a considerable proportion of old Bourbon coffee trees. Some are even more than 15 years old, and for the plantation owners these coffee trees are the fruit of hard maintenance, and do not cut down the coffee trees because of their age, and these old bourbon trees provide better cup flavor although they produce less fruit.

Traditionally, Salvadoran coffee farmers are not so careful about the process of coffee fruit sun exposure, and at the same time, the equipment is relatively simple, but Fernando has continuously updated many equipment in the treatment plant, making Santa Elena Manor one of the few estates in El Salvador to use African trellises for coffee fruit sun exposure. Although the use of African trellises often takes longer, it can improve the performance of coffee in terms of cleanliness and sweetness.

At the same time, Mr. Fernando also began to establish his own washing treatment station 15 years ago. Through his own washing treatment station, the estate owner can control the subsequent coffee treatment and carry out more detailed honey treatment batch experiments. In Santa Elena Estate, Mr. Fernando will not immediately peel or sun the coffee red fruit after harvesting. Instead, he will first place the red fruit in the clean water tank of the treatment plant for static treatment to enhance the coffee sweetness performance. Finally, the follow-up treatment is carried out.

In the past, although many excellent washed batches of coffee can be found in El Salvador, they are often slightly inferior to other countries in terms of sweetness and thickness. Santa Elena Manor is one of the few estates in El Salvador with honey treatment and sun treatment experience. Fernando Manor owners are almost picky about every detail of honey treatment and sun treatment. These efforts have enabled Santa Elena Manor to win seven COE competitions since 2003.
