Since the beginning of 1990, Ana Cafe has been actively introducing and classifying the producing areas of Guatemala according to the flavor, climate, soil and height of coffee. The latest division is the Acatenango producing area near the Fuego volcano. In Acatenango producing areas, coffee trees generally grow in mountains above 1800 meters. At the same time, due to the influence of Fuego volcanic eruption, the rough and sandy soil is rich in minerals and is blown by the Atlantic sea breeze. Farmers in Acatenango producing areas mostly use traditional sunshine rather than dryers for follow-up drying steps.

Finca Hermosa is currently managed by the third-generation manor owner and quite young Max Fernando Perez Rios. In the Acatenango producing area, the Max family can be said to be one of the first families to carry out coffee planting, and still owns a lot of cultivated land today, while Max integrated four pieces of farmland owned by other brothers and sisters in 2010 and named it Finca Hermosa. In Fairview Manor, Max has a variety of dry and wet treatment equipment for a long time, but also set up African scaffolding to improve the quality and stability of subsequent coffee drying. In terms of manor management, Max, as the third generation manor owner, has his own set of ideas. Throughout the coffee harvest and processing season, we can often see the planting land and processing plant that he entered with the workers to actually participate in the coffee processing process to ensure the coffee quality. At the same time, in Fairview Manor, Max still adheres to the all-day drying method adopted by his grandfather to improve the sweetness of coffee. In addition, due to the influence of microclimate, the climate of Fairview Manor is quite suitable for using sun-treated coffee. Before the production season, we and Max proposed to make a batch of fine micro-batches of raw beans using the sun method, while using the excellent traditional Typica as the main variety of the sun. After quite many attempts, we officially completed this batch of Fairview Typica boutique coffee in 2015.
