Elida Estate Manor is one of the highest coffee growing sites in Panama. Coffee trees grow under rich shade trees and have fertile and nutritious volcanic soil. In order to keep the coffee quality of the manor at the top, the Lamastus family has invested a lot of research in processing technology, especially in drying and storage, such as experimenting with ideal drying periods and suitable storage equipment for shelled beans. Although the Panamanian coffee industry is not like a professional project or laboratory in other countries, the Lamastus family and their neighbors are members of SCAP (Specialty Coffee Association of Panama), and they constantly get together to discuss each other's methods and new plans. In SCAP, members have a good relationship of sharing and cooperation.

Elida Estate has already made itself one of the most respected boutique coffee farms in Panama. The Lamastus family, the growers of the past century and an experienced and proud coffee family, are constantly looking for new ways to improve their already outstanding coffee. Elida Estate has a very ambitious plan to completely replant geisha coffee on the estate. The farm now consists of 80 per cent Catuai, 15 per cent Geisha and 5 per cent Typica. It is also worth mentioning that El Burro, the sister estate of Elida Estate, already grows geisha by 90%. In addition to the persistence of the variety, of course, we will continue to ensure good quality control and expect to make continuous progress, which is what Wilford and his team insist on.

The coffee fruit is completely picked by hand, and three different post-processing methods are used in the manor. Washing method (Washed Process), honey treatment method (Honey Process) and sun treatment method (Natural Process). The system for washing coffee fruit has zero sewage discharge, which means that the water used to wash coffee will be mixed with pectin and peel and pulp as fertilizer. In the sun treatment, the coffee fruit will take about ten days to dry to reach 10% water content. No matter which post-processing method is used, the batches harvested every day will be separated, most of which are about one to ten bags of raw beans, an average of about five bags. Sometimes different batches are judged by cup test, and batches with similar flavor can be mixed into a larger batch. When the coffee is processed to the state of shell beans, it will be cooked for about 75 to 100 days, and the defective beans will be removed by hand before export.
