Saint Isabel Manor is actually called St. Isabel Cobain Manor. The "Koban" mentioned in the full name is the Koban rainforest in central Guatemala, and the varieties are Kaddura (Caturra), Catuai (Kaduai) and San Cristobal Verapaz. The first two are mentioned in "Coffee Science" or "New Coffee Science" written by teacher Han Huaizong. They are coffee tree varieties with excellent genes.

Unlike the usual method of fermentation and direct drying, St. Isabel Manor is very special. the treatment they use is semi-fermentation followed by rest in water, thus giving the beans a different flavor.
