Ethiopia Honggut Hunkute washing Plant 1 / 2
The "Hunkute" cooperative, located in the Dalle district of Sidamo in southern Ethiopia, is the highest location in the producing area. There are two washing plants for handling cherries, "Honggut No. 1" and "Honggut No. 2". The two washing plants have a total of 920 members by 2017.
Plant 1, 1850 meters above sea level, was built 10 years ago, and Honggut 2 plant is even higher, 2150 meters above sea level, built 5 years ago. Although the local environment of Dalai Dalle is barren and primitive, and the facilities of the treatment plant are simple, it can still magically produce amazing coffee every year.
The two washing plants collect cherries from nearby farmer members. After peeling and pulping, they ferment for 24-36 hours, depending on the weather. Then wash the surface mucus, divided into two grades, and then soak in water for 12-24 hours. After the whole washing process is completed, the viaduct in Africa is exposed to the sun for 10-15 days and dried in natural sunlight. In the process of drying, it must be fixed and turned over so that the air can circulate and dry evenly.
All the cooperatives in Ethiopia belong to a certain alliance, and Honggut belongs to the Sidamo Union, which can sell and export coffee. They will shell and grade before export. The characteristic of Honggut is that they pursue not only quantity but also quality.
Honggut is recognized as one of the best quality producing areas in Sidamo. Because of its high altitude and complex raw bean varieties, Honggut is permeated with the aroma of citrus, lemon and fine jasmine, making it a popular producing area for many coffee bakeries in the world. Ethiopia is also the most popular.
