Nowadays, more than 90% of them pass through this trading system, but ECX trading system is not a good thing for buyers who like fine coffee. For this reason, Ethiopia has launched DST (Direct Specialty Trade) system since 2010. DST system is an Ethiopian auction held irregularly. Only fine coffee specialty coffee with SCAA cup test standard of more than 80 points can be traded with foreign green bean merchants under the name of their own farm or cooperative.
In Ethiopia, sun-dried beans are distinguished by adding 3 and 4 after the name (3 is better). After harvesting, coffee cherries are immediately dried in the sun-drying field with their peel and pulp until the coffee is dried to 16% moisture. Then they are dried in a dryer to reach the same moisture content. Then they are wrapped in parchment or sheepskin and repeatedly rubbed until the surface mucosa is removed. Polishing and drying is the processing process of sun-dried beans.
