Introduction:

Carmen Manor is located on the Chinchontepeq volcano, which has a beautiful and evocative meaning in the indigenous language-"twin peaks"-from the volcano's striking, belle-line shape. There is also a romantic legend about the volcano's origin. Legend has it that in a town near the volcano lived a beautiful girl who was crazy about every man, but no man was lucky enough to get her favor. One day, the girl jumped into the volcano, and the volcano erupted immediately, changing the original shape of the volcano, as if the girl was lying on the ground, leaving a beautiful double peak outline.

Carmen Manor has a history of about 90 years and is a traditional family business passed down from generation to generation. The current owner is Alfredo Cristiani Burkard. Carmen Manor is about 1450 meters above sea level and has a naturally cool climate. At first, 70% of Carmen's coffee production was bourbon and 20% was Pacas, a rare species. Recently, Pacamara has become Carmen's new favorite, accounting for about 10% of the total production.

About the HIU program:

HIU, a development project to improve the quality of small-farm coffee, has produced more than 500 unique microbatches in El Salvador and Panama. Founder Graciano Cruz has built this operating model on years of experience in coffee production, working with farmers, producers and exporters to develop from terroir to terroir with the goal of creating quality coffee.(Cup score of at least 85 or higher) Each product is tailored to meet consumer demand for coffee batches. HIU first identifies unique products and producers based on variety, terroir, microclimate, folklore, culture or processing methods, and confirms the essence of raw beans through cup testing to establish flavor profiles. Before the cooperation begins, let producers understand HIU's program objectives and specifications, and jointly formulate quality and yield improvement plans; in the process, improve production technology by educating farmers, testing the sugar content of ripe coffee cherries, implementing eco-friendly treatment methods, and constructing equipment to improve dry environment conditions. HIU plans to establish a complete production chain that makes each batch identifiable and traceable: cup testing to establish quality and batch classification, special packaging in units of 50 pounds (vacuum box) or 100 pounds (GrainPro inner bag), traceability of each batch, and roaster coffee flavor files and producer information.
