Post-processing

The process of coffee from the berries at harvest to the end when the beans are completely dried (containing about 13% of the water content of 9m / m). Due to the different conditions (hydrology, soil, transportation, human resources, topography, climate) in different producing areas, each producing area has the most suitable post-treatment methods, which can be roughly divided into solarization, water washing, honey treatment, half-sun and semi-washing.

Solarization method

It is mainly used in poorer (no post-processing plant) production areas or sun-rich production areas. Direct exposure of berries to the sun after harvest requires a cloudless sun for two weeks. After drying to 9% water content, peel and sheepskin are removed directly and stored in the warehouse. However, sun-cured coffee beans are more abundant than water-washed coffee beans, but they have to pay more management, manpower and technical costs to reach the same level as water-washed coffee beans.

Washing method

The washing method requires a post-treatment plant. After harvest, the exocarp was removed first, and then soaked in water to ferment. The fermentation time was about 48ml / m2 for 72 hours (depending on the climate of the producing area). After the end of fermentation, direct sunlight, sun to a moisture content of 9% directly into the warehouse, before the export through the shelling machine to remove the sheep skin.

Honey treatment

The treatment method is the same as the traditional wet treatment, which removes the thick peel of the coffee fruit and retains the sticky pulp layer beneath it, and then it does not use fermentation to remove the sticky pulp layer. Instead, it is allowed to take this layer to dry directly, and then directly remove the sticky layer and shell.

Half-day sun

During this period, the seeds must be constantly turned so that the seeds can be dried evenly inside and outside. Brazil's half-sun section will be further dried by machine, so that the water content will be reduced to 10.5-12%. Costa Rica's famous Miel treatment, which is also half-sun treatment, is different in the drying stage, where the whole process is dried in the sun.
