When it comes to Vietnamese coffee beans, do you think of adding condensed milk or dripping cups? Or do you think of the bitterness of inexpensive Robusta? The Vietnamese government has just approved a coffee development plan with an investment of 170 billion Vietnamese dong (over HK $5800), hoping to improve the quality of Vietnamese coffee beans, build brands, increase export volume and sell prices.

Vietnam dripping coffee uses condensed milk.

The scheme will last for five years and will be implemented from next year to 2023. Of the HK $58 million invested, about HK $37 million will be funded by the Government and the rest by private or state-run organizations in the industry.

The plan aims to increase the total value of Vietnamese coffee beans by 5 per cent by 2020 and by 7 per cent by 2023, including increasing production of Arabica and Robusta coffee beans. In fact, Vietnam has become the world's second-largest producer of coffee beans after Brazil, in large part because local private and state-run institutions have grown Robusta coffee trees heavily over the past 20 years.

The plan includes the establishment of a large, high-quality coffee breeding area and the addition of new drying systems, storage equipment and processors. It is estimated that each designated area can produce 2.7tonnes of Robusta or 2 tonnes of Arabica beans per hectare.

The plan also includes marketing both locally and overseas with a view to increasing local sales and providing export prices. The Ministry of Agriculture estimates that the export value of Vietnamese coffee beans will reach 2.34 trillion Hong Kong dollars this year.

In fact, Vietnam has always had a unique coffee culture. Since the 19th century, the French brought coffee to Vietnam, and the Vietnamese climate is suitable for growing Robusta, but because of the bitter taste, it is customary to add condensed milk to neutralize the bitter taste; as for choosing condensed milk instead of fresh milk, it is because the French brought coffee to Vietnam, but fresh milk is easy to go bad, so condensed milk is introduced.

Today, many Vietnamese coffee shops bring dripping coffee cups to their guests, allowing them to watch the coffee drip and taste it slowly. In addition to condensed milk, individual coffee shops also add egg yolk, cheese, butter and cheese to their coffee to bring freshness.
