Ethiopia is the birthplace of coffee, where there are more than 1.1 million small coffee farmers, the local variety is called Ethiopia Heirloom. Hunkute is located in the mountains of Sidama in southern Ethiopia, and farmers grow coffee at an altitude of 1800-2000 meters. Coffee beans from the Hunkute Cooperative have always been the quality assurance of the Sidama region, and it is already one of the most popular coffees in Ethiopia. The coffee here always has aromas of citrus, lemon wine and subtle jasmine, which we think is the result of a combination of high altitude, local smallholder farming and native species. Due to the lack of serious diseases and insect pests and the lack of local funds, chemical and mineral fertilizers are not used locally, coffee is basically grown organically by default, and now the Hunkute Cooperative has been certified as an organic producer and has obtained Debio Norway,NO- crop KO-01 certification.

"We have been buying coffee from the Hunkute Cooperative for many years. One thing we notice every year is that coffee beans stored until the end of the year taste better than the coffee just harvested at the beginning of the year.

The freshly harvested coffee beans have less aroma and are slightly green, but as long as they are properly stored for a period of time, we find that the overall state of the coffee beans will gradually stretch out and the aroma will gradually become obvious. When we test last year's and this year's coffee beans at the same time, we always come to the conclusion that last year's harvest is better than that of the current season. However, as long as we give the season's raw beans some time, their flavor is as good as in the past. The long shelf life of Hunkute coffee beans may be attributed to the high density and moisture content of coffee beans in this area. That's why I waited a while before I started selling this coffee. When we start baking, we need to make sure that its flavor performance is at its peak. "
