Salvadoran coffee is grown in Finn Gustavo Belle Mussbella Vista, located in the city of Ataco in Concepcion Avachapan, El Salvador. This is a 37-acre farm owned by Guti é rrez and managed by her husband Jose Enrique. The husband and wife team uses their experience as a third-generation coffee producer to improve farm productivity and health, including the production and application of microbial composting tea on farms. Over the past two years, the couple have also diversified their farms and legume production, ensuring family food security and acting as nitrogen remediation devices to promote coffee factory health and cherry production.
Many of this mixed varieties are sun-dried combined with patios and raised beds after processing. The mixing of "honey" process, which is not completely different from pulping natural or semi-washed, involves mechanical removal of coffee cherry skins by depulper, but some fruit meat is allowed to remain in the seeds. Then, instead of fermenting to remove mucus in the tank, the coffee is taken directly to the sun to dry. The result is a very delicious coffee that retains some of the best quality, a process of complete washing and dried cherries.
