Manning is not the name of the producing area, the place name, the port name, nor the name of the coffee breed. How did its name come from? In fact, it is a phonetic error of the mandheling people in Mandaining, Indonesia. During the Japanese occupation of Indonesia during World War II, a Japanese soldier drank mellow coffee in a cafe, so he asked the shopkeeper the name of the coffee, and the boss mistook him for asking where you were from, so he replied: Mandaining. After the war, the Japanese soldiers recalled the "manning" they had drunk in Indonesia. As a result, 15 tons of Indonesian coffee was transported to Japan, which was very popular. That's how Manning's name came out, and the coffee merchant is now the famous PWN Coffee Company.

The full-bodied aroma of Cunninghamia lanceolata and the bright flavor of Sydney become more obvious when the temperature changes, and the taste of syrup and black tea appears with the decrease of temperature. The overall taste is rich and mellow.

Baking strategy:

This Mantenin from Lake Tawa has bright acidity and charming Sydney flavor, which is slightly lighter than other mantenins (10 seconds earlier) in order to retain and present this feature.

This type of bean has more space, and the deep baking scheme also performs well, which is more mellow, thicker and sweeter.

Wet planing treatment is very common in Indonesian coffee, which is different from general washing and tanning methods: the endocarp of washed, honey-treated or sun-dried beans is retained until the bean body is dehydrated and hardened, and the moisture content is reduced to 12%. Or sealed and stored for 1-3 months before grinding off. However, the wet planing method takes off the endocarp when the bean body is wet and soft, and the moisture content is as high as 30-35%, so that the surface of the raw bean is directly exposed, and then continue to dry. This is because Sumatra has a humid climate and a method developed according to local conditions to speed up drying. The drying time is shortened, the fermentation period of coffee beans is shortened, the sour taste is greatly reduced, the alcohol thickness is increased, and the caramel and fruit aromas are obvious, with slightly woody and herbal flavors, which is the classic "regional flavor" of Manning coffee.

The Sumatran coffee referred to by boutique coffee refers to Mantenin in Aceh and Mantenin in Jiangsu Province, one in Lake Toba in Jiangsu Province and the other in Lake Tawa in Aceh. What the mantenins of the two producing areas have in common is that they are thick and mellow, the difference is that the mantenin of Lake Toba is more stuffy and low with herbal flavor, while that of Lake Tawa is more sour, or has a cedar or woody flavor.

The Mantenin is from the Xiaguang Cooperative in Azitawa Lake District, which is also a women's coffee cooperative supported by the International Women's Coffee Association. Susi Mulyati, a coffee picker, lives in the remote mountains of Aceh, a war-torn area, where she lives with her 5-year-old son, who died in armed conflict, in the village's pristine wooden cabin. There are many single mothers like her, so they formed a women's coffee cooperative called Megah Berseri (magnificent light). The cultivation and harvest of coffee is the main source of income for their survival. Some of the profits from these special batches of Mantenin sales will return to the village to help them live, train them in farming techniques, set up scholarships for their children, and subsidize pregnant mothers.

The Indonesian coffee produced by the Xiaguang Cooperative is organically grown without pesticides, and the ripe sweet red fruits are picked. After wet planing and natural sun drying, these are planted and picked by them, hand-selected Mantenin, which has been carefully selected three times, and the raw beans are green and clean. All red fruit picking gives this manning extremely high sweetness, and three hand selections improve the cleanliness of this coffee.
