Today's Sidamo Coffee Bean article brings you Sidamo honey pomelo.

Name: Sidamo honey pomelo

Country of origin: Ethiopia: Sidamo Oromia

Flavor: pomelo, citrus, honey, maple syrup

Treatment: sun baking: shallow baking

The third bag of the seven-day gift bag, Sidama honey pomelo, the reason I don't like grapefruit is sour and bitter. The lazy spirit when I was a child was also strange. I often stuffed my mouth with the thin skin outside the grapefruit flap without peeling it clean, and sometimes I accidentally bit the grapefruit seeds, so I always thought that grapefruit was only sour and bitter since I was a child. After growing up, I slowly began to accept many things I missed when I was picky when I was a child, and I still like grapefruit.

This bag of coffee, to be honest, I haven't drunk any coffee at all. I always feel like I've had a cup of fake coffee. It is worth mentioning that Sidamo's coffee is a natural decaf. Really, this is the first time I have yawned less than 3 hours after drinking coffee.

The goods just arrived last week in Yega Xuefei, Ethiopia, and many students have tried it with me. Whether it's the original flavor or the chilled summer drink, the acidity of Yega is fascinating. This time Sidamo is also from Ethiopia, with a flavor similar to that of Yega, but with a heavier, more obvious sweetness and a mellow taste.

Ethiopia has two of the best producing areas, Yegashifi and Sidamo, of which Sidamo is located on a plateau in the south of Ethiopia. Sidamo Coffee beans are grayish, thick in some places and small in others, with soft and strong acidity, mellow and sweet and spicy. It is one of the courtyard coffees in the highlands of southern Ethiopia. Unlike ordinary African coffee, Sidamo coffee has clear acidity, smooth taste and delicate floral smell, which is very similar to Yega Chuefei not far away. The taste of Sidama in the sun is close to the smell of flowers, but it is about a little earthy. Water washing has nutty fruit aromas and a slight cocoa aroma, but what they have in common is smooth taste and viscosity, comfortable and pleasant acidity and fragrance. Light or medium roasting is suitable for individual products, while medium or deep roasting is suitable for blending coffee and good Espresso base.

Note: (grinding fine powder, using 19.5g:300.5g powder / water ratio, temperature 89.7℃, hand punching pot)

Opening the bag of Sidamo honey pomelo, the smell made me think I had opened a bag of QQ candy. When the hand was flushed, the sweet and sour fruit was washed into my nasal cavity by the heat, as if I were making a cup of fruit tea, which also reminded me of my favorite Nestle Vitamin C drink when I was a child. After I washed it, I held up the sharing pot. The bright orange in front of my eyes was appetizing, like a glass of red wine, but I was really making coffee.

As soon as the coffee is tasted, the acidity and bitterness burst out together, and then the bitterness fades away in an instant, and when it is swallowed, the sour taste also disappears, and the mellow feeling left on the root of the tongue is a little more mellow than Yega Chefe. Before I carefully taste mellow, my mouth is filled with a kind of taste, which is actually sweet! The speed of returning sweet is really beyond my expectation. I think it should be suppressed sweet under the sour taste. Take another sip, sour and sweet like fruit juice mixed with fruit aroma, really without the characteristics of coffee. After a few mouthfuls are no longer bitter, no matter how to drink, I think this is a heated Fresh Juice is right. Small mouthfuls continue to taste, soft sour taste mixed with a touch of sweetness has been superimposed in the mouth, careful experience, the mouth is full of lingering aroma, stop, the sour taste dissipated, has been suppressed and covered up as if the sweetness broke out in an instant, bringing endless aftertaste.

Conclusion: if Sidamo coffee tastes as sweet as juice, taste as mellow as honey, natural decaf coffee (obviously drunk three hours ago, but now yawned and tearfully wrote this review) is a good cup after dinner. Sidamo and Yega Xuefei can be said to be the sisters of Ethiopian coffee. Sidamo is more like a petite and mischievous sister, mild and pleasant, elegant and playful, with a strong taste impact with later bright lemon acid. the taste is unique and mellow, sweet and pleasing, and the slowly rising end rhyme contains chic sweetness.
