Kenya Othaya producing area | what is the flavor of Mahiga Mahiga AA TOP washed bean Batian and Ruiru 11?

Mahiga treatment Plant belongs to the well-known Kenyan cooperative, Othaya Farmers' Cooperative. The cooperative is located in Nyeri, the Aberdeen Mountains region in the highlands of central Kenya. The coffee-growing area of the Mahiga treatment plant is 122.2 acres and currently has 503 members. The climate of this area is cool all the year round, the soil is organic volcanic laterite rich in phosphorus and other minerals, the drainage is good, the average annual rainfall is 1326mm, and the average temperature is about 13-26 °C. Coffee cherry ripens slowly, so it can grow into high quality coffee beans with high hardness.

There is always a lot of impressive coffee produced in the Nyeri producing area of Kenya, and this month we added a Mahiga microbatch from the producing area to our bean list. Mahiga is the name of a processing plant, covering more than 120 acres, belonging to the Othaya Farmers' Cooperative, and has more than 500 farmers. Its location in the central highlands of Kenya, cool climate and organic volcanic red earth is a unique good environment for coffee. The temperature falling at 13-26 °C extends the ripening time of coffee fruit, thus creating coffee fruit with high firmness and high sweetness. its acidity is different from that of Kenyan black plum in the past and let us like it!

Nyeri area is the main producing area of Kenya, Hiriga processing plant is to collect nearby farmers not more than 5 kilometers away, the biggest feature of this place is shading is mainly with banana leaves, this is quite a traditional Nyeri producing area of good coffee, but not sharp lemon flavor, is a fresh and bright comfortable beans, I suggest a shallow baking degree City, but the heavy-baked chocolate flavor is very pleasant.

Flavor: the wet aroma is like the aroma emitted when cooking applesauce and with brown sugar aroma. Malic acid can be felt at one entrance and is like Fuji apple, then it quickly turns into plum acid, which is different from most Kenyan plum notes. Mahiga's plum notes show Japanese pickled red plums, which are often added to rice balls, with sweet and sour taste, and the tail rhyme is surrounded by the aroma of tangerine peel tea.

Production area: Othaya (Othya, Nyeri)

Altitude: 1981m

Treatment method: washing

Rating: AA TOP

Varieties: SL28, SL34, a small amount of Ruiru 11 and Batian

Test shallow baked flavor: BlackBerry, green malic acid, scented tea, citrus aroma, good cleanliness.

Qianjie recommended cooking:

Filter cup: Hario V60

Water temperature: 90 degrees

Degree of grinding: small Fuji 3.5

Cooking methods: the ratio of water to powder is 1:15, 15g powder, the first injection of 25g water, 25 s steaming, the second injection to 120g water cut off, waiting for the powder bed water to half and then water injection, slow water injection until 225g water, extraction time about 2:00

Analysis: using three-stage brewing to clarify the flavor of the front, middle and back of the coffee. Because V60 has many ribs and the drainage speed is fast, it can prolong the extraction time when the water is cut off.
