Food you should know.

Claims that cold-brewed coffee has lower caffeine content or higher antioxidant power are myths. Because temperature is more conducive to the solubility of many molecules, and can change the structure of coffee powder, so that many small molecules that were originally tightly held by coffee can be released. No matter what kind of coffee, as long as the right amount of drinking can be both leisure and health.

Before Wayne launched a referendum: "Hot bubble or cold bubble coffee, which has more antioxidants?" 37% of friends thought it was hot brew coffee, while 63% thought it was cold brew coffee, so cold brew coffee won by a landslide of 6:4! But don't get too excited, because this has been proven wrong in scientific experiments...... a new study shows that hot brewed coffee has more antioxidants than cold brewed coffee. (P.S. Therefore, this tells us that the referendum result does not necessarily represent scientific facts. Is it very similar to the outcome of the import referendum in Japan's five counties? Haha.)

This study, published in Scientific Report, tells us a lot about cold brew coffee, proving that many of the previous beliefs about cold brew coffee in the coffee or food world are actually a myth. The following is a comparison of the results of the study after hot and cold bubble analysis of five origins (Brazil, two Ethiopia, Colombia, Myanmar and Mexico):

1. pH value (slightly lower in hot bubbles): pH value of 4 hot bubbles is lower than cold bubbles

2, acidity (hot bubble high): hot bubble titratable acid is more than cold bubble

3, coffee chlorogenic acid (hot bubble high): After analysis, hot bubble coffee contains higher coffee chlorogenic acid

4. Antioxidant power (high hot bubble): After analysis, the antioxidant power of hot bubble coffee is obviously higher

In addition to the second point and the traditional understanding of cold coffee, the third and fourth points can be said to subvert the general public's claim of cold coffee, so in fact hot coffee contains more coffee chlorogenic acid, which has many functional antioxidants, and antioxidant power is also relatively high!

The authors explain that this may be because temperature is still conducive to the solubility of many molecules, allowing them to dissolve from coffee to water; in addition, high temperature will also change the structure of coffee powder, allowing many small molecules that were originally tightly held by coffee to be released.

The myth of cold brew coffee is even more debatable when caffeine is factored in. Because cold-brewed coffee is most often claimed to be low in caffeine, in fact, another study found that a cup (355ml) of cold-brewed coffee contained about 207 mg of caffeine, while a cup of hot-brewed coffee contained 142.5- 495 mg of caffeine per cup, and Espresso 75- 225 mg per serving. So the caffeine content of cold-brewed coffee falls somewhere in the middle. In fact, caffeine content and bean species, origin, brewing methods and models have a great relationship, the change can be said to be quite large. So Wayne doesn't think it's safe to say that cold brewed coffee is low in caffeine.

In addition, if according to the method of marking caffeine traffic lights in Taiwan, caffeine 100 mg/cup is marked as green light, 100--200 mg/cup is marked as green light, and 200--300 mg/cup is marked as red light, cold coffee 207 mg of caffeine already belongs to red light, it is difficult to say that it is relatively low in caffeine.

Therefore, many masters say about cold coffee, in fact, are misinformation myths, we listen to good don't take it too seriously. In short, coffee no matter how to drink, drink what beans, as long as the right amount of drink, can have leisure taste, while both health effects (see: a coffee a day, death away from me), so do not mistakenly think that cold coffee caffeine content is low or antioxidant power is high, drink too much at one time. Happy and healthy coffee, isn't that good?

Then, of course, this small poll cannot reflect the actual situation of the referendum, but it can at least give us some reflection, that is, what people believe may not be the truth. Isn't that a little cold sweat?
