The blue label is the rosy summer from the Emerald Manor in Panama.

Jadeite Manor

In 1996, the Peterson family bought a coffee farm in Boquete, the Jaramillo region of Camelot. The farm is famous for its proper planting height (1450 meters) and the elegant citrus aroma of coffee.

It is a farm with a long history, in which there are many kinds of coffee grown by owners of all ages. The Peterson family added 60 hectares of planting areas, some of which were once used to run the dairy industry, or, more accurately, significantly renovated the entire farm, and many of the newer areas did not start harvesting until 2003-2004.

In 2002, his son Daniel Peterson suddenly had an idea that maybe not all the coffee beans in the whole producing area had such a good taste, but that the coffee beans in one of the producing areas had a special taste and created the coffee flavor. So he began to test the beans for the whole manor, and finally found this special coffee tree species in a small valley at the highest altitude of the manor, that is, the coffee bean "Esmeralda Special", which we sold at a very high price. Coffee beans from other regions are certainly of good quality, but they are not as amazing as Esmeralda Special. Now we know that coffee like "Esmeralda Special" comes from cold weather, careful harvesting, and innovative processing.

We are not sure whether the coffee flavor is mainly due to the microclimate of this small valley, or because of the rare coffee variety (Geisha) grown there, or a combination of two reasons, we will continue to study. Unlike most gourmet coffee, this coffee needs to be carefully selected to stand out. In fact, most of the coffee beans we export are Esmeralda Special & # 39; not beans from other producing areas.

Blue Mountain Coffee usually refers to coffee beans growing in the Blue Mountains of Jamaica, more than 666 meters above sea level.

Because it is only planted in limited areas, the harvest is very low. The output of raw beans in 2014 was about 875 metric tons. July 2013-July 2014, the amount of raw beans exported by Jamaica to Japan was 283 tons, plus 440 metric tons * 2. The total is 723 tons. After baking, 578 tons of ripe beans will be produced. Taking 15 grams as a cup, about 38.56 million cups, the average person in Japan drinks less than one cup of Blue Mountain coffee in a year. In fact, Blue Mountain coffee beans are the same as other coffee beans grown in Jamaica, but because they are cultivated in a harsh environment and screened through strict inspection, they produce a very meticulous taste. In 1953, the Jamaican government drew a clear line between the Blue Mountains and other areas in accordance with the law, stipulating that the name of Blue Mountain Coffee should not be used for coffee in areas other than the Blue Mountains. Only coffee made in selected areas of the Blue Mountains can be called "Blue Mountain Coffee".

Of all the coffee, only Blue Mountain Coffee is in buckets, and other coffee exits are in sacks. It is said that from the mid-18th century, flour shipped from England to Jamaica during the British colonial period was recycled in empty buckets and used to transport coffee and rum. The buckets used today are all wood from temperate forests in the United States. the advantage of buckets is to absorb and release internal and external humidity without much change, which can alleviate sudden temperature changes in the process of transportation. Another barrel sealed off coffee aroma, can maintain the best coffee quality, but the additional cost will be higher.

In terms of flavor, Blue Standard Rose Summer will have the aroma of maple syrup, the entrance has the flavor of lemon, citrus and jasmine, and the overall flavor is clean and light; Blue Mountain Coffee will have a rich chocolate and nutty flavor and a mellow taste. Sour, sweet and bitter taste blend perfectly.

Tip: when brewing Blue Mountain Coffee, due to the deep roasting degree, it is recommended that the water temperature be between 84 and 86 ℃, and the brewing time be controlled within 40 "to avoid miscellaneous and astringent taste."
