FINCA MERIDIANO-MARIO HERVAS

Mario Hervas owns a 25-hectare farm called Finca Meridiano, of which 6 hectares are used to grow coffee. Finca Meridiano is located in the northwest of Ecuador's Picinza province, adjacent to a small village called Meridiano. Finca Meridano not only has the ideal conditions for growing coffee, but also has important water sources, which greatly improves the quality of the coffee produced and ensures the output of Typica Mejorado.

Mario is an agronomist who has worked with large rose farms in Ecuador for 17 years; he now applies this knowledge to his coffee farm, which is certainly an absolute demonstration of innovation. It was difficult for Mario to determine the perfect variety of coffee for his farm. Fortunately, he took the risk of planting juicy and floral Typica Mejorado on the entire 9 hectares of land.

This variety is also one of the most historical varieties in the world; it originated in Ethiopia / Yemen and has been grown all over the world. This is a very problem-prone variety because it is vulnerable to all three serious coffee diseases-coffee leaf rust, coffee fruit disease and nematodes. Fortunately, Mario's agronomic background means he is the perfect person to maintain this breed, and as you can say, it's all worth it.

Ripe coffee fruits are peeled off and fermented in water for 30 hours on the day of picking. After that, the coffee will dry on a high bed in the greenhouse for 20-24 days. Mario hopes to further improve the quality of his coffee by adjusting the drying process in the next few years, and hopes to be confident to participate in the competition and win awards in the next few years.
