The Pacas variety, first discovered in El Salvador in 1949, is a natural hybrid between bourbon and Catura.

The variety Pacamara, which was artificially bred by pacas and maragogipe (or maragogype), was first bred in 1958 (1954). Pacamara species is a rare artificial breeding of excellent varieties, blue is better than blue, perfectly inheriting the advantages of the mother plant, both the excellent taste of pacas species, raw bean granules also inherited the large size of malagogipe. The Pacamara species is thought to be the result of the pursuit of large Arabica species.

Salvadoran coffee is mellow, slightly sour and well balanced. After more than a century of accumulation, El Salvador has accumulated rich experience in coffee production, and boutique coffee has entered the world market.

At present, the average price of boutique coffee in El Salvador is more than US $300 per picket (about 46 kilograms), much higher than the average reference price in the international coffee market. Hugo Hernandez, chairman of the Salvadoran Coffee Commission, said that these boutique coffees are mainly aimed at the middle and high end of the market, and the main consumers are in places such as the United States and Japan.

Hern á ndez said that since 2017, El Salvador has exported about 1400 piculs of coffee to China. This signal is very important and we will find a new market for Salvadoran boutique coffee in China.

He said that with the establishment of diplomatic relations between the two countries in August this year, the Salvadoran coffee industry is looking forward to strengthening cooperation with China to promote high-quality Salvadoran coffee to further enter the Chinese market.

Not only selling coffee, El Salvador also hopes to provide Chinese consumers with more comprehensive and professional knowledge and experience in "making coffee" and "tasting coffee".

"(often) the coffee itself is of good quality, striving for excellence in the process of planting, picking and roasting, but there is something wrong with brewing." Ernesto, director of the coffee school in El Salvador.
