Coffee variety Pacas (Pacas) is a mutant of Bourbon, which was first discovered in El Salvador in 1949. The biggest difference with bourbon is that its plant is shorter, fruiting in clusters, high yield and so on, and its flavor is better than that of Kaddura (Caturra). Pacas varieties are often used as maternal parents for breeding. For example, Pacamara is the hybrid offspring of Pacas and Maragogype.
