Guide reading

As we all know, the third wave of coffee has brought up boutique coffee, and the development of boutique coffee has made people aware of the importance of producing areas, coffee varieties and treatments. Why is breed important? Baristas of Qianjie Coffee often share with guests that the essence of coffee is a plant, a crop, and a fruit. Differences in varieties will directly affect coffee production, disease resistance and coffee taste.

Take the apple as an example, the green apple is blue, the taste is hard, and the acidity is high; the crystal red Fuji fruit is flat or pile-shaped, the fruit surface is smooth, the wax is more but the fruit powder is less, it tastes hard, juicy and fragrant, sour and sweet.

Such examples abound in life, and so is coffee. The most representative example is the comparison between Arabica and Robusta. At the species level, coffee is mainly divided into three types: Arabica, Robusta and Liberika. Today, coffee beans around the world mainly belong to Arabica and Robusta, while Arabica is more popular than Robusta because of its lower chlorogenic acid content and more refined flavor. Robusta coffee is more disease-resistant and insect-resistant, and its yield is much higher than that of Arabica, but it has the disadvantage of bitter taste and lack of delicate taste, so it is generally used for commercial coffee that does not pursue too much flavor.

But in the world of boutique coffee, variety refers not only to Arabica, because Arabica and Robusta refer to the species level (Species), but also to distinguish between the varieties under the species (variety). At this time, we often talk about varieties, such as iron pickup, bourbon, Rosa, and so on.

Although it belongs to Arabica species, different varieties lead to different taste and production capacity, such as high yield of Kaddura and exquisite taste of Rosa. Speaking of varieties, Qianjie coffee believes that there must be two earliest varieties, one is the iron pickup, and the other is the bourbon variety to be shared today.

The origin of bourbon varieties

In the 18th century, the French introduced round coffee beans from Yemen to the island of Reunion, which was still named Bourbon, hence the name bourbon. Then the bourbon variety took root on the island of Reunion and gradually adapted to the local planting environment. Although the bourbon variety was introduced very early, the bourbon variety did not spread until the mid-19th century.

In 1860, bourbon varieties were introduced to Brazil and quickly spread to various countries in Central and South America, where coffee beans are still grown and produced.

Color distinction of bourbon varieties

Speaking of bourbon varieties, we have heard a lot about the colors of bourbon, such as red bourbon, yellow bourbon and pink bourbon.

Red bourbon or the most common type, because in general, coffee fruit will slowly ripen in unripe green, to light yellow, then to orange, and then red at the best time of picking, and finally to overripe dark purple.

Trained pickers will know when to pick coffee fruit-by observing the color of the coffee fruit to pick the best coffee of the day, the immature coffee fruit, the coffee beans, has not yet accumulated enough nutrients to develop a delicate flavor, and overripe coffee fruit is also prone to overfermentation. One of Qianjie Coffee Ye Jia Xuefei comes from the Red Cherry Project, which aims to improve the income of farmers and the quality of coffee beans by buying coffee fruits harvested from all red fruits at a higher price, thus achieving a win-win situation.

To get to the point, red bourbon is so because the fruit is red. The same is true of yellow bourbon and pink bourbon. Yellow bourbon is generally considered to be a cross between red bourbon and other varieties. Yellow bourbon will show yellow fruit when it is ripe. It was first found in Brazil. At present, Brazil is also the main producer of yellow bourbon. In addition to the yellow fruit, the yield is also relatively low and is not resistant to wind and rain, so it is not widely planted.

Pink bourbon is even rarer. Pink bourbon is derived from red bourbon and yellow bourbon, but it is rare because the pink shape of the fruit is determined by recessive genes, so it is very easy to interfere with it, so it is difficult to maintain the appearance of pink fruit.

How does bourbon taste?

If you want to find the taste of bourbon coffee, Qianjie coffee should start with Brazil. Although bourbon has spread to many coffee producing countries in Central and South America, its shortcomings are doomed to be replaced. Bourbon and Tippica, the two oldest Arabica varieties, have very low disease resistance and insect resistance, and the yield is not high. The only desirable thing may be its excellent taste in the cup. So many Central and South American countries are more likely to plant Kaddura, a natural variant of bourbon, as well as other varieties that are more disease-resistant and higher-yielding.

At the same time, Qianjie Coffee believes that Brazil as the first stop of bourbon varieties in Central and South America, Brazilian bourbon species may be more representative, note that Qianjie Coffee wants to express more representative rather than the best. One of the most recommended Brazilian coffee beans in Qianjie Coffee in recent years is the yellow bourbon variety. This Brazilian yellow bourbon coffee comes from the Queen's Manor in the Morgiana producing area. With sun treatment, we can drink obvious nut tonality, cream and so on.

In addition to the yellow bourbon of the Queen's Manor, Qianjie Coffee also has a red bourbon bean from the South Minas region, which is treated in the half-sun. This coffee tastes like nuts and chocolate with a caramel finish.

Comparing the two Brazilian bourbon coffee, in fact, it is not difficult to find that the tone of the bourbon variety is dominated by nuts, while the obvious sweetness is also very pleasant.
