Speaking of Rose Summer, I have to mention the Emerald Manor in Pokuet, Panama. Back in 2004, Emerald Manor participated in the Panamanian Coffee Bean Cup Test Competition (BOP) and won the BOP championship for many years. As a result, Rosa Coffee became famous.

In 1964, Rudolph, a Swedish-American financier. Rudolph A.Peterson retired, moved to Panama and bought the emerald estate in Bouquete, but at this time the emerald estate was dominated by dairy.

Until 1973, his son Price. Peterson earned a doctorate in neurochemistry in the United States, but returned to Bouquete to help his father run the farm. After Price takes over, it divides the market into three major brands to sell according to altitude and micro-climate, cup test performance and planting varieties (Esmeralda Special,Diamond Mountain grows,Palmyra). Since 2012, Rosa has become one of the four major brands.

In fact, Jade Manor includes four farms: Ca ñ as Verdes, El Velo, Jaramillo and Palmira, and the first farm to be bought is Palmira. The picked coffee cherries will be sent to these four farms for post-processing.

Green label Rose Summer

The rosy summer of the jadeite manor is divided into three grades: red mark, green mark and blue mark. The distinction is based on the planting height and supplemented by the actual cup test results.

Red bid, that is, the bidding batch. This batch of roses can only be purchased through the annual global auction. The red standard rose summer is planted at an altitude of 1600-1800 meters, and the cup test score is more than 90 points, mainly from Jaramillo and Ca ñ as Verdes manors. after the meeting, it is made into raw beans treated with sun or water, but there is a new yeast treatment in 18 years.

Green mark, that is, the collection batch. Although it is not the most advanced bidding bean, it also has the classic flavor of Rosa Coffee. It is planted at an altitude of 1600-1800 meters like the Red Standard Rosa, but the Green Standard Rosa is a micro-batch of coffee beans from three different estates, Jaramillo, Quiel and Ca ñ as Verdes. This grade of rose summer is also washed and tanned.

Blue mark, that is, selected batches. The mixed beans are planted at 1500 meters from three different estates of Jaramillo, Ca ñ as Verdes and El Velo. This grade of rose summer is only washed.

Baking analysis

The green standard rose summer bean is hard, because it is the bean of the new season, so the water activity is better. Raw beans are slender, pointed at both ends, and the distance from the bean table to the bean core is short, so we choose the way of high temperature rise, rapid dehydration and fast baking rhythm to show the multi-level fruit flavor of green roses and the explosive scent of flowers!

The furnace temperature is 160℃, the firepower is 110min, and the throttle is open to 3.5. when the furnace temperature is 140℃, the throttle is opened to 3.5. when the furnace temperature is 153.3 ℃, the bean meter turns yellow, the grass smell disappears completely, and enters the dehydration stage. When the furnace temperature reaches 161℃, the firepower is adjusted to 90, and the throttle remains unchanged.

The smell of toasted bread has obviously changed to the smell of coffee, which can be defined as a prelude to an explosion. The green label aroma and flavor of the new season are more intense, with ginger, jasmine and cream, lemon and orange with obvious flavor and juicy feeling, and a long-lasting aftertaste.

In the old production season, the green label rose summer flavor will sink, the aroma is honeysuckle, jasmine, cream is more obvious, the flavor will be partial to black tea, citrus and caramel flavor.
