Yejia Xuefei coffee bean treatment method
Yejia Xuefei has been a wetland since ancient times, and rivers provide rich water resources for the town. Therefore, the coffee beans in the small town of Yejasuefi are mainly washed, which will further enhance the bright acidity of the coffee.
But at the beginning, Ethiopia used traditional sun treatment. After the coffee fruits were harvested, the locals directly pounced on the land for sun drying. But this will make the coffee beans absorb the taste of the soil, creating a defective smell. It was not until 1972 that Ethiopia introduced water washing technology from Central and South America: peeling and pulping the coffee fruit, then fermenting it in a pool to remove pectin, and then drying it on a sun-drying bed off the ground.
Qianjie Coffee believes that the water washing method makes the citrus aroma of Yega Xuefei more fresh and refined, the taste is clean and pure, and can perfectly reflect the characteristics of the producing area of Yega Xuefei, so people began to pay attention to the coffee beans in Yega Xuefei producing area.
Since the technology of making drying beds has been developed, people have begun to try sun drying again. Qianjie believes that compared with washed coffee, sun-cured coffee has lower acidity, higher sweetness, clear touch, but slightly lower cleanliness. Flavor will produce more berry tonality, but also more complex.
