Dabie is the cooperative wet mill of Iraq Babo. Big Bibi started construction about 50 years ago and in 2010 built a new wet mill that went beyond agricultural practices to produce higher quality products and bring a higher premium to farmers. There are about 1000 members in Dabie County, ranging from 1700 to 2200 meters above sea level. This special coffee comes from a drying process, which means that the cherries as a whole are placed on a raised bed to dry for about 20 days, and then the dry outer layer is removed. This produces a cup of coffee, which retains the taste of fruit, body and soft acidity.
