Bourbon (red, yellow, orange)

Modern coffee varieties come from two basic populations, Typica/ Tipica and Bourbon--, both Yemeni advances, which spread around the world in the 18th century.

Around 1715, some Arabica plants were introduced by the French to the Indian Ocean island of Reunion (then known as Ile Bourbon). These typical trees mutated on the island, giving rise to a variety later known as bourbon, which was more productive than its ancestors. This unique characteristic makes this new variety a valuable transplant for Brazil (planted in Brazil in the late 18th century), other parts of Central and South America, as well as the African continent, especially Rwanda.

Bourbon was introduced to Brazil in the 1860s (some accounts it was as early as 1852) to make up for the loss caused by the supply of coffee leaf rust epidemic in Java and partly because Brazilian Rose became the world coffee superproducers since then.

Although the variety is prone to rust, breeders around the world have made extensive use of the above varieties to produce typical and bourbon-derived varieties. Both crops have a unique cup-shaped shape, but show similar agronomic behavior, which is characterized by high sensitivity to many pests and low adaptability.

The best producing area for bourbon is 1100 to 2000 meters above sea level. The quality of its coffee is similar to that of regular coffee, but it usually produces 20% to 30% more coffee. However, compared with other common coffee varieties, such as bourbon derived varieties Caturra, Catuai and Pacas, it is considered to be a low yield variety.

The bourbon coffee tree has large, wide leaves and wavy edges, and has more secondary branches than other coffee trees. The berries are very small, very thick, and can be red, yellow or pink depending on the subvariety. Red, yellow and pink (sometimes called orange) bourbon is a variety with natural mutations in recessive genes.

Bourbon is highly respected for its complex acidity and wonderful balance. It often has a sweet, caramel quality and good and crisp acidity, but can present a rather unique taste depending on where it is planted. El Bourbon tends to put butter, toffee and fresh pastries; Rwandans tend to have a stronger fruity aroma.

Yellow bourbon

Orange bourbon

Another "natural" red bourbon was first discovered and developed in El Salvador. The cherries of this plant are usually pink, so they are sometimes called "pink" bourbon.
