Ethiopian diamond 0419, carbonized impregnated

The venue, called Diamond 0419, is a replica of Diamond 1318, which Agnieszka Rojewska used to win the 2018 World Barista Championships. The ancestral breed uses "carbonized impregnation" technology, in which coffee is fermented in a sealed environment, free of oxygen and washed with carbon dioxide. This controls the activity of yeast and the development of fermentation together with the control of temperature and humidity.

As a filtered coffee, this carbonized and impregnated ancestral variety has flavors of orange, orange blossom and peach.
