When I tasted Sudan Rume for the first time, I was surprised that I had tasted so much cardamom in the cup. It was so sweet. I have never experienced this taste, it is a "manual" added to the coffee. In specialty coffee, we usually prefer the bright sweetness of fruit; this is something we are used to, and we all seem to enjoy it. After drinking this cup of coffee, I paused for a moment, realizing that the experience of drinking coffee evolved over time. In the second wave of coffee, people tend to have a strong bitter taste because it is a commercial and industrial product they are used to. In specialties, we mainly look for sweetness, because it is essentially the most pleasant taste. Most of the taste-oriented projects I see in origin now are about sustainability, but when it comes to taste, people turn to weird floral aromas and berries.
I wonder if we will one day see a shift towards truly mellow, spicy, sweet and cardamom drinks. I know that although I was surprised at first (I looked forward to flowers and berries again, and even said that my first reaction might be to ignore the Sudan Rume on the cupping pot), I absolutely loved this magical cup. Linking these tastes to history and stories broadens my view of personal tastes, thus adding a new dimension to my coffee world.
