Organic Natural Bensa is another example of Red Cherry Project premium coffee. It comes from a place called Bensa in Sidama Zone, an administrative district to the north of Gedeo Zone where Yerga Sirphine is produced. There are ten towns (Woreda) in the whole Sidama district, such as Dale,Yirgalem,Aleta Wondo... In addition to being part of the Red Cherry Program, Trabocca's parent company Trading Organic is also one of Europe's most powerful organic producers and has coached farmers in Banso to achieve organic certification.

In this program, careful women select fully ripe coffee cherries, so 100% are harvested when the coffee cherries are fully ripe. There is a big difference in the flavor of the brewed coffee, so careful, hard-working Ethiopian women are an important driver of the Red Cherry Project. Red cherry action has washed, sun beans, semi-washed, semi-sun, experimental coffee and so on.

Trabocca, the promoter of the Red Cherry Project, invested all the profits earned in recent years in all cooperative farms. Trabocca emphasized that this was a plan without benefits, so the company only had four people, including the boss and secretary, to implement the Red Cherry Project. Other administrative related matters were supported by the parent company to reduce administrative expenses, and all profits were returned to the cooperative farms.

Since 2005, small coffee cooperatives at high altitudes in the present three regions of Sidama, Yegashev and Lim have been selected. Encourage and assist producers to improve washing, semi-washing, solarization or other experimental treatments as much as possible to improve the quality of coffee, and ensure the quality of each batch through testing (professional cup testers are also stationed in coffee producing areas to grasp the coffee flavor most directly).

Hand washing parameters: 15g powder, V60 filter cup, water temperature 90℃, powder-water ratio 1:15, grinding degree BG 5S (Chinese standard 20 sieve pass rate 58%).

Method: Steam with 30g water for 30 seconds, quickly inject water into 125g sections with small water flow, continue to inject water to 227g when the water level drops and is about to expose the powder bed, remove the filter cup when the powder bed is about to be exposed, and start steaming. The extraction time is about two minutes.
