Coffee trees in Matagalpa are ancient bourbon trees, which are usually planted on hillsides at an altitude of 1200 to 1500 meters. They have been recognized as excellent organic coffee at high elevations by the OCIA (Organic crop improvement Association).

In fact, the planting conditions of Nicaragua are not inferior to those of Central American countries, and the coffee produced in Nicaragua is characterized by a fresh and balanced taste; what is amazing is that the coffee produced in high altitude areas is sour, sweet and soft in taste, with clean and bright fruit aroma; when roasted in medium baking, it has a strong floral aroma and smooth taste.
