The process of sun treatment of coffee cherries is to pick fully ripe cherries first, and then immediately put them on the bed of the drying shed to increase the sweetness of the flesh so that the sweetness of the flesh can be absorbed by the seeds, the sun treatment method is especially suitable for areas where water is scarce, or in a very dry environment, Yejiaxuefei uses the sun treatment method when water resources are scarce. In order to avoid excessive fermentation or even mildew, the fruit must be often turned manually on the drying bed to let the air flow and dry evenly. When the fruit is dried in the sun, it is sent to the dry processing plant (dry mill) to remove the dried pulp. The sun drying procedure is actually quite complicated and easy to fail in the process, but good sun treatment can bring stronger sweetness, thicker taste and more detailed sour taste.
