Natural ("dry") method [also known as solarization]
The uniqueness of this method lies in the absence of water.
In natural (or dry) processing, the pulp of the berries is attached to the coffee beans and dried at the same time, which is why the coffee processed in this way has a strong fruit flavor. Growers around the world can try natural processing, but it is used more frequently in Brazil, Yemen and Ethiopia.
① collection: after harvest, the coffee berries are sent to the processing site.
② drying: coffee berries are spread out on a high drying bed and turned to ensure that the fruit does not rot or ferment during drying. After a few days, the berries will become very hard and the skin will look like raisins.
③ peeling: dried berries are peeled, removing all pulp, mucus and peel at once. Then classify the coffee beans.
