Qianjie-introduction to Rose Summer washing of Sofia Manor in Panama
In 2008, Willem Boot bought an extremely high-altitude estate from Ricardo Koyner, the owner of Catova, and named it Finca Sophia, the town of Volcan in Panama.
Sofia Manor, at an altitude of 1900-2150 meters, is one of the highest coffee farms in Central America. From the day Sofia Manor was founded, William and his partners have been trying to explore the boundaries of the highest elevations where the world's top coffee is grown.
The manor is named after Sophia, the goddess of wisdom in ancient Greek mythology, and its Logo design comes from a kind of highland pigeon that lives in the manor (called Torcaza in Spanish).
The estate is jointly owned by William and his American partner, Equator Coffee Roasters, and is day-to-day managed by local coffee farm operators in Panama. Before 2008, no one in Panama had ever planted rose summer above 2000 meters above sea level. So even though William's team had previous experience of growing coffee at the mule estate, in the Wakan area of Sofia Manor, under the multiple blows of mold and strong winds peculiar to elevations of 2150 meters and high altitude, that is, from 2009 to 2011, the first batch of rose summer seeds were wiped out. Fortunately, William, who has far more perseverance than ordinary people, did not give up. Finally, after seeing the dawn for two consecutive years in 2015 and 16, he won the championship of Rose Summer washing Group in the 2017 BOP (Best Panama, Oscar of Coffee Industry) Competition.
The rich and strong flavor of Sofia Rosa is extremely rare, which is why William decided to fully display the flavor of the coffee beans through complete washing. In 2017, Sophia participated in the BOP competition for the first time because of its complex flavor and high sense of sweet and sour balance. Although it was the first time to participate in the competition and won the championship of the BOP Rose Summer washing Group, all the international judges unanimously called it "Super Rose Summer", and Ric, the chief judge and president of the Fine Coffee Association (SCA), called it the best coffee he had ever had.
