Traditional Costa Rican farmers use peeling machines at washing stations to control the amount of pulp retained, and then determine the treatment results of yellow honey, red honey or black honey according to the amount of flesh retained. In contrast, Francisca retains the highest percentage of peeled pulp, but presents different flavors by controlling the time the beans are dried and flipped on African scaffolding.
Due to the careful management of three generations of the family, Las Lajas has invested and improved a lot of equipment to better handle and process coffee beans. But not every farmer has this ability and energy, so Francisca will also help neighboring farmers with berry processing and marketing. The berries of neighboring farmers who are processed by Las Lajas and meet their highest standards are called "black souls".
