The bean is from the famous Sidamo region of Ethiopia, Africa. In the United States, it has been rated 95 by Coffee Review, a professional coffee cup testing website. From the Yadi processing plant in Sidamo, the coffee is tanned on an elevated shelf.
The coffee produced by Yadi processing plant has the same size of raw beans and exudes a strong fruit aroma all the time. Local farmers use manual selection to select moderate mature coffee cherries for high scaffolding sun treatment, in the process of handling coffee for 15 to 17 days or so, manually receive the coffee cherries on the scaffolding every two hours to ensure that the coffee cherries can be evenly sun-dried before shelling and packaging.
Yadi's treatment method is different from that of other sun-dried beans in Ethiopia. Yadi manually selects defective beans before drying, rather than after the coffee is processed. Of course, Yadi processing plant will manually select defective beans after obtaining raw beans, so Yadi will have one more process of selecting defective beans than other raw beans! High scaffolding is also used in the drying process, which can not only increase air circulation, but also prevent coffee cherries from absorbing bad taste in the drying process.
