Sul de Minas, as its name implies, is located in the southern state of Minas Gerais, Brazil. The hills here are rugged and the climate is mild and pleasant. Rain Water kisses the coffee tree and brings just the right amount of water to make the coffee beans play the most effective role.

Sul de Minas is home to some of the largest coffee farms in Brazil, but more than half of the farms in the region are small and medium-sized (10-150 hectares), where small farmers have grown coffee for generations. Because of their existence there are more cooperatives in this particular region than in other regions of Brazil.

At Sul de Minas, we also found sub-and micro-areas (such as Camodeminas) famous for producing specialty coffee. When farmers use their climate and soil to grow better coffee, we should see more miniature areas on the cupping table. The common processing methods in this area are water washing, natural pulping and natural pulping.

Flavor:

Neutral and smooth, low acidity, delicious chocolate taste. The shallow baking will have a sour taste, but the taste is quite dry. Medium baking and more fascinating places. Reduce most of the acidity and make the wine fuller with more traditional nutty and chocolate tones. Deep baking becomes more intense, full-bodied, with a smoky dark chocolate flavor and a nutty finish.
