The Cafe Granja La Esperanza Cafe in Colombia's Cauca Valley is probably the most famous ultra-professional micro-batch producer in Colombia. Pacamara XO . Their Finca Las Margaritas is no exception. With a score of more than 90 points, the cup is a passionate event with aromas of passion fruit, almonds, dark chocolate and tropical fruits such as pineapple.
Finca Las Margaritas is located in Valle del Cauca County, Caileonia City, about 1700masl. The Herrera family, which owns three generations of coffee growers, owns the farm. The miniature batch is only composed of Pacamara varieties. Such a variety is a cross between a natural mutation in a bourbon variety (called Pacas) and a mutation in a Typica variety (called Maragogype).
Coffee is prepared using a natural mixing process called XO by Granja. Inspired by the long aging of French brandy.
Cherries are strictly selected only when trained employees are fully mature. Then ferment them with skin and meat for about 22 hours. After fermentation, leave the coffee in the silo for up to 72 hours. Then the skin is mechanically removed without water, and finally, the second fermentation step is carried out with only parchment and mucus for 35 hours. The coffee is then dried on an elevated bed and let sit for three months to stabilize it.
