Las Cotorras is a coffee farm on the plateau of Triapa, where the biosphere reserve is located.
The name of the farm means "parrot". That's because when you cross a remote plateau, you can see very beautiful birds. With the passage of time, it has become a symbol of authenticity and freedom in the region.
The birds, known as Cotorras, have found an ideal habitat on coffee farms in the highlands of Chiapas that produce high-quality coffee. In this area, you can see the juxtaposition of southern and northern species, which are attracted by the natural richness of the region.
The El Triunfo biosphere is a reserve of nearly 120000 hectares. It represents the last cloud forest in Central America, in which naturally formed condensates are trapped by the forest. This gives life to a large number of plants and animals.
The Maragogype variety (pronounced mar-rah-go-jeepeh) was first found in Brazil as a mutation of the Typica variety. The plant is very distinctive because of its high height and huge leaves and fruits.
Coffee seeds / beans are also very distinctive because of their large size. It is usually nicknamed "elephant bean". This has generated some interest in bean because it is very unique.

I've seen some of the coffee from Brazil, Guatemala and Mexico, but the new cultivation of this bean doesn't seem to be very popular because of the growing interest in Kenyans and Rosa in recent years. This variety is also the male parent of two other varieties: Maracaturra (crossing with Caturra) and my beloved Pacamara (crossing with Pacas). You know I love Pacamara.
No matter how tall it can grow, its per unit yield is very low. Many of the Maragogype lots you see around the world are a mixture of several small lots that are sold to local factories and then scattered into larger lots. However, this is only from Las Cotorras.
This is a blend of modesty and fantasy: stack dark chocolate digestive biscuits in raspberry Pavlova cake. First, dark chocolate is based on the sweetness of cookies, but immediately you get a hint of juicy raspberries and strong sweetness and creamy body.
