Trinidad E. Cruz Mr. Cruz founded Santa Felisa many months ago in 1904 with the philosophy of integrity, quality, loyalty and justice, all of which involve social and environmental issues... what a man! The farm has developed into Maya Kakchiquel district with families who still work on the farm today. Fast forward 103 years, four generations of coffee growers, here we come!

Santa Felisa is located in Acatenango, Chimaltenango, Guatemala, at an altitude of 1,500 to 1900 meters. It is run by brother and sister Antonio and Anabela Meneses. It grows yellow Catuai, red bourbon, red Typica and red rosewood.

The farm is experimental and currently uses 7 different processing methods for cherries! The batch has been processed using its "K72" method, a variant of the washing process that replicates some of the typical methods for Kenyan coffee. The cherries are pulped and then left for 24 hours in dry fermentation. The fermentation process was stopped by adding water and then repeated twice until the 72 hour mark was reached (hence the K72 name!). The coffee is then immersed in water for another night, then washed and dried on the terrace.

This coffee variety is the all-rounder! A controversial variety found in Central America, although starting to appear more frequently in recent days, is indeed quite rare. It is known for Panama's Best Auctions organized by Panama Manor and Panama Professional Coffee Association.

Rose was originally introduced to Central America in Costa Rica (1953), not Panama as many believe. Originally an heirloom (low-yielding) variety from the southwestern Ethiopian town of Gesha, it has a low yield, thin, prickly shoots susceptible to strong winds, and is friendly to pests and diseases (although it is resistant to coffee rust!). The leaves are also long and thin, and the plants grow tall, which is a bit clumsy!

In the cup test, this coffee has a very fruity sweetness that reminds me of canned fruit salad in juice. There is also white tea and mild apricot aftertaste.
