Caldas Caldas is one of the main coffee growing areas in Colombia. Together with neighboring Risaralda and Quind í o, it forms part of the "coffee axis" or "coffee triangle", indicating that important coffee activities have taken place in the region-from research to social support programs to freeze drying to dry grinding. In turn, it is part of the coffee cultural landscape and is listed as a world coffee cultural heritage by the United Nations Educational, Scientific and Cultural Organization.
Caldas's undulating landscape is defined by the slopes where coffee is grown. The alpine town sits on the ridge, where small farmers and medium-sized estates grow mainly single-grown coffee and are protected from excessive sunlight through near-constant haze in the area. Many of the plans of the Colombian Coffee Growers Association have their official seats in Caldas, including the Cenicafe research facility.
Relatively speaking, many farms in Caldas can be reached by the main road, thus accelerating the speed of processing and export. The department is home to many famous universities and coffee producers have access to many commercial and educational resources. The city of Chinchina is also home to Compa á aCafetalera La Meseta, one of Ally's Colombian export partners, a family business run by five Mu ñ oz siblings.
La Cristalina is located in Vereda BajoEspa ñ ol of the Central South Autonomous region. Its 21 hectares are between 1460 and 1790 meters above sea level, of which 4.1 hectares are dedicated to environmental protection. The three Valdes family farms-Paraana,La Cristalina and San Pablo- are all high-tech farms with an impressive total of 421000 trees, of which 142000 grow on Finca La Cristalina. Replant parts of the farm every year, always keeping in mind biodiversity and the environment. The coffee is washed and pulped in an ecological factory, the pulp is put into composting, and then converted into organic fertilizer for coffee trees.
Coffee cultivation complements the shade regulation system of trees, including walnut, cedar and guava, which create habitat for many birds. Finca Cristalina planted black cedar, an endangered tree, in the nursery of his coffee shop. The forests of farms are a source of natural resources, creating habitats for many birds and animals.
Parana, the oldest of the three farms, has lived in the family for more than a hundred years and now belongs to the fourth generation. Sylvio Valdes (Silvio Valdes) was the original owner, and when he died, his property was left to five children, some of whom sold their parts. However, since 1960, some of the sold parts have been repurchased, and by 1999, all family legacies have been recovered. In 2006, San Pablo and La Cristalina were added to Parana to continue the tradition of growing coffee.
Farmer Luis Jose Valdes (Luis Jose Valdes) maintains the family tradition with Caf é Cuatro Generaciones, the umbrella company of the three farms. The name refers to four generations of his family who have been involved in coffee production. The farm's post-harvest registration system allows full traceability of each batch.
